A Gluten Free Experiment
I've lived with digestive issues for over ten years now. It's kind of crazy to say that. It started back when I left home for college. I've been somewhat stubborn about it and only sought out doctor help once. He ran some tests and was mostly unhelpful. The only interesting thing he pointed out was that my test for Coeliac Disease tested "slightly positive." Though after telling me that, he said he didn't think it was the problem.

It's been a few years since that doctor visit. We've continued to put a lot of thought into what causes my issues. I personally think the two leading causes are stress and processed food, but even when I feel "good" I don't really feel like a healthy person. We finally decided to try something drastic in the new year. With Heather's huge help, we are going to eat gluten free for the first four weeks of 2013. This is a big deal for me. No craft beer! No pizza! No pasta! How will I do it? Heather thinks we'll find good alternatives.

I've been adamantly against such a diet for a long time. I just couldn't see myself giving up so many of my favorite things. What convinced me to try it was when I really thought about what my goals for the experiment would be. Coeliac disease is not something I believe I have. I don't think I could have lived for ten years with this if it was full-on Coeliac. If this experiment results in a significant improvement to my quality of life, I fully expect to be able to work some gluten foods back into my diet. In the end, I hope that it will be about moderation. Pizza once a month. Pasta once a month. One or two beers a week. Coming up with rules like that is something I could definitely live with if it meant feeling better all the time. That is my best case scenario for this experiment.

I hope that using the blog to talk about our successes and failures will help keep me motivated. Maybe it will even help someone else out there with a similar problem.
